Sustainability is the word and we have been following the trend on Galician style beef. Our hand selected Irish ex dairy cows can be from 5 to 11 years old and are retired to good pastures, eating the worlds best grass on the wild Atlantic way. This produces beef full of flavor and intense marbling. The loins are dry aged in our Himalayan salt chamber for a minimum of 60 days and only on maturity is removed and butchered to your requirements.
